A tale of awakened passions, Sensatia follows the path of an uninspired ballerina and overworked violinist as they are led by a muse into a fantasy cabaret where their magic is rekindled. Merging film, live music, perfumery, and culinary arts, the show is unique to Faena, and takes audiences on a journey of inspired discovery, promising a transcendent experience for guests. Designed by Michael Wolk, the space is a reference to the tropical palette of Brazil, showcasing mineral tones of copper and gold and accents of burnt orange, avocado green and rust in the fabrics and finishing touches. Upon entering the greeting lounge, the space emanates an eclectic mix of furniture and fixtures inspired by the laidback, informal feeling of the best of the tropical lifestyle. The multi-level 450 seats restaurant features a private dining room/events space and visible glass wine cellars surrounding the main dining rooms offering 150 international labels with a capacity of 2,500 bottles.

In preparation of the Miami location, the kitchen and wait staff traveled to and trained at Brazilian flagship Coco Bambu locations to fully assimilate into the restaurant’s cuisine, tradition and signature customer service. To complement the expansive food options, Coco Bambu’s bar program will showcase an equally extensive drinks menu, featuring Coco Bambu’s Signature Drink Frozen Caipi Coco ($14) made with frozen coconut, and Grey Goose Vodka, their signature Caipis (caipirinhas or caipiroska), including Honolulu ($14) made with strawberry, pineapple, lime, ginger and Ketel One Vodka, Tropicalia ($14), which uses mango, pineapple, passion fruit and Belvedere Apeach Vodka and Axe ($14) with Passion fruit, “dedo de moça” pepper and Belvedere Vodka. Risk It All at Swine Southern Table & Bar

The name is quite self-explanatory. Swine is the younger brother to Miami Beach favorite, Yardbird Southern Table & Bar. Available from 10 PM – 4 PM, the Coral Gables destination perfectly illustrates the concept of traditional Southern cuisine and soul food, and incorporates the use of a massive in-house smoker in the kitchen and wood-fire grill to do just that.

Some of the signature menu items from Yardbird appear on the Swine menu, such as Mac & Cheese and Green Tomatoes, but for the most part, the menu is hog driven and tastefully so. Brunch menu highlights includes, Smoked Brisket, BBQ Ribs, Pulled Pork and the locally famous Swine Burger to name a few.

Opening its doors in Brickell City Centre this fall, La Centrale introduces a restaurant-forward concept with more than 38,000 square feet of authentic Italian-inspired restaurants and cafés, an enoteca, a culinary school and retail space.

Inspired by the 20 prominent regions of Italy (such as Apulia, Campania, Sicily and Tuscany), La Centrale’s architecture and décor are reminiscent of several regions and instilled into every detail throughout the entire food hall.

From the moment visitors enter La Centrale, they will be met with a mecca of the best of Italy’s famously diverse culinary traditions and will have their wanderlust satisfied with the food hall’s Italian Holiday-inspired ambiance. First Floor

The first floor will greet visitors with a multi-sensory convivial vibe driven by true Italian hospitality, where they can find fresh-brewed espresso, breads, house-made pastas and other culinary staples to recreate their favorite La Centrale meals at home. The first floor will also feature an eatery for a communal dining experience in a warm atmosphere.

Second Floor

The second floor holds original, multi-course restaurants serving traditional Italian fare throughout the day for varying lunch and dinner options. Visitors will find restaurants that cater to all tastes with fish-, meat- and seasonal-inspired restaurants, to name a few of the concepts. Visitors will also find the perfect place to catch up or network over cocktails and light delicacies in an Apulian-inspired indoor garden on the second floor. Third Floor

Wine enthusiasts and those looking to learn more about Italy’s bountiful food culture will find everything they need at their fingertips on the third floor. This floor offers patrons interactive wine tastings, pairings and food programs directly with Italian wine experts in a uniquely inviting setting. The third floor also plays host to La Centrale’s culinary school, designed to connect visitors with Italian chefs in a friendly and educational environment where they can learn how to prepare authentic Italian meals at home.

Spearheading the efforts of Miami’s first Italian food hall is world-class power duo Jacopo Giustiniani and Matthias Kiehm. The managing partners are conceptualizing the creative direction to properly introduce Italy to Miami.

“La Centrale’s design delivers a multifaceted experience energized by the delight of a trip to Italy, all under one roof,” says Jacopo Giustiniani, managing partner of La Centrale – Italian Food Hall. “It’s chic, lively, effortless, and one hundred percent authentic. We are importing products straight from Italy and serving fresh, local produce. Our goal is to share the heart, spirit and soul of Italy with Miami locals, providing Brickell residents and visitors from around the world with the best of Italian cuisine and hospitality.”

Jacopo Giustiniani, a native of Italy, has wine culture in his blood. During his formal education at Universita di Firenze, he spent time overseeing and learning his family’s winery in Tuscany, which includes 47 acres of vineyards located in the renowned wine region of Colline Lucchesi. He is most known for preserving the traditions of Italian wines into Felice Wine Bar in NYC. In 2006, Jacopo moved to the U.S. to become the wine buyer for SA Hospitality Group.

Hand-in-hand with Giustiniani is Matthias Kiehm, who has more than 25 years of experience in the hospitality business. Matthias spent a majority of his career in worldwide directorial and managerial roles with Four Seasons Hotels & Resorts in Los Angeles, Boston, Chicago and Sharm El Sheikh, Egypt. Among his more significant positions, Matthias served as the vice president of Ritz Hotel, Paris, and as the Business Director at the prestigious department store Harrods in London, where he successfully developed and opened 12 restaurants at Harrods Food Hall.

Officially opening its doors on Monday, February 6, Level One is helmed by Italian-trained Executive Chef Ricardo Nieri, whose cuisine takes guests in a journey around the world with signature dishes like Cashew Crusted Prime Filet Mignon & Pumpkin Gorgonzola Risotto, Seafood Casserole and Level One Chocolate Mousse.

Level One’s 230 seat industrial urban space also features an intimate second level lounge area. Although the lounge officially debuts in March 2017 with after-dark programming, the space is currently available for private events complete with full amenities and wait staff.

Weekly events will include a live music night on Tuesdays with Gu Fidelis from 8 pm – 11 pm and Feijoada Saturdays, which features the famed Brazilian bean stew dishes accompanied by sounds by Thais and Flavio from 3 pm and 6 pm. Delivering outstanding food, service and entertainment, Level One strives to become a neighborhood staple that keeps guests coming back, setting precedent in Brickell for what true hospitality and customer service should be.

Born and raised in São Paulo, Brazil, Chef Ricardo Nieri’s passion for gastronomy was fostered through the years as we worked at his father’s restaurant, laying the groundwork for his culinary skills.

Armed with ambition and determination to become one of the best, Chef Nieri attended Alma La Scuola Internazionale Di Cucina Italiana, the most prestigious culinary school in Italy, where he was mentored by world renowned Italian Chef Gualtiero Marchesi. Upon graduation in 2008, Chef Nieri began working as Chef De Cuisine at Star Michelin restaurant Pierino Penati, where he further developed his skills in Italian cuisine.

Wanting to expand his knowledge and practices, Chef Nieri later took his culinary trade overseas where he worked as Chef de Cuisine in The Colonnade Hotel and Pali Mall Bistro in London, Executive Chef at Italy Restaurante in São Paulo, Executive Chef in Pax Restaurante in Rio De Janeiro, and Executive Chef at Kupu Barung in Singapore, before arriving at Miami.

Borrowing from his experiences abroad, Chef Nieri describes his cooking as Modern Italian Cuisine with Asian Influences and Amazon Spices, which he now serves as the Executive Chef at Level One, Brickell’s newest restaurant, bar and lounge.

Hailing from the suburbs of Philadelphia, just over the Ben Franklin Bridge in Southern New Jersey, Maxwell Parise started his career in hospitality at the tender age of 8 years working as a server at a family restaurant in Stone Harbor, New Jersey.

Prior to pursuing a career as a mixologist, Maxwell continued to work in hospitality as he attended Drexel University for Architectural Engineering and Florida State University in Panama for International Business. It wasn’t until he moved to Miami that Maxwell discovered the world of mixology. Despite his years of experience, Maxwell worked his way from the bottom at Filling Station and Garage Bar, starting as a a dishwasher and becoming a manager within a year. From there, he went on to work at Michael Shwartz’s The Cypress Room where he got his first experience behind the bar. He then transitioned to Rest 27 and the Broken Shaker before earning his position as the Head Bartender at InterContinental Miami Hotel’s Toro Toro.

Having learned and worked with some of the best chefs and bartenders in the world, Maxwell now serves as Level One’s Bar Manager where guests enjoy his signature cocktails such as The Hic’up, a smoked cachaça old fashioned with hickory and Eddie, a squid in vodka concoction served in a lightbulb.

Focusin on having fun while delivering a unique sensory experience to his patrons, Maxwelldraws from his background working with renowned chefs and infuses spirits with fats, vegetables and anything from the ocean to create sophisticated, yet untamed and visually appealing cocktails.
